Oils used in cooking are obtained from seeds, fruits, or vegetables. Cold-pressed oils are derived from oily seeds like black cumin, canola, sunflower, coconut, olive, or sesame, without the application of heat. When heat is applied, the taste and nutritional value are compromised. The cold pressing method involves crushing seeds and nuts, using pressure to extract the oil, making it an efficient and health-beneficial process.

Benefits of Cold Pressing

Oils extracted through cold pressing are processed at lower temperatures, which allows them to retain higher phenolic content and nutritional values compared to hot-pressed oils. This method does not alter the properties of the oils. By using cold-pressed oils, their full taste, aroma, and nutritional values are preserved, making them perfect for both cooking and skincare purposes.

Cold-pressed oils are healthier because they maintain their original nutrients. Many cold-pressed oils are rich in anti-inflammatory properties and vitamin E, which helps boost immunity.

How is Cold Pressed Black Seed Oil Made?

Cold-pressed black seed oil contains high levels of polyunsaturated fatty acids (about 60% of total fatty acids) and monounsaturated fatty acids (about 24%). In addition to fatty acids, it contains compounds like CPBCO, sterols, phenolics, essential aroma compounds, tocopherols, and carotenoids. These compounds are mostly destroyed in hot-pressed black seed oils.

Using a cold press oil machine, black seed oil is extracted without exposure to air. The machine is easy to use and has a capacity ranging from 1 to 40 kg with a power of 1.5 kW. With the inverter speed control, oils from other products of different hardness can also be obtained.

These machines are typically used by vegetable oil producers, herbalists, stores, pharmacies, and industries involved in large-scale oil production. While cold pressing is not widely used for olive oil in late or early harvest seasons, it is becoming increasingly popular and can be achieved with different types of equipment.

How Cold Should the Cold Pressing Be?

The ideal temperature for cold pressing is below 50°C. At this temperature, the oil is processed slowly, preserving its chemical composition and nutritional value. For example, according to the British Cold Press Oil Producers (BACPOP) standards, cold-pressed oils must be produced at temperatures below 40°C. This low temperature ensures the preservation of the oil's beneficial compounds.

Differences Between Cold Pressing and Hot Pressing

There are some important differences between cold-pressed and hot-pressed oils:

  • Production Method: In cold pressing, the oil is extracted at room temperature (around 25°C), and the acid value is relatively low. The oils are filtered and separated after the extraction process. In hot pressing, the oil is extracted at higher temperatures, which significantly increases the acid value and damages the oil’s natural quality.

  • Composition: Cold-pressed oils retain most of their natural physiological and chemical properties, including the original taste. Hot-pressed oils lose many of these properties, including important nutrients like vitamin E, sterols, and carotenoids.

  • Yield and Cooking Process: The yield from cold-pressed oils is typically around 35% of the total weight of the oil, while hot-pressed oils yield around 37%. Cold-pressed oils do not foam or become muddy when used in cooking, whereas hot-pressed oils may undergo these changes.

Which Is Better? Cold Pressing or Hot Pressing?

Cold-pressed oils are far more beneficial for health. Hot-pressed oils undergo oxidation, which can lead to complications such as cancer and inflammation. Furthermore, many healthy compounds are lost during hot pressing, while cold pressing preserves all the beneficial elements. Cold-pressed oils do not require refinement, unlike hot-pressed oils, which are often refined to improve taste and acid content.
